Beef Peanut Butter Stew
Ingredients
- 1.5 Tbsp oil (peanut if you have it)
- 2 lbs stew meat
- 1 Sweet Onion (diced)
- 1 can (15.5 oz) white beans (Cannellini or Great Northern)
- 1 can (15 oz) diced tomatoes
- 1 small (6 oz) can tomato paste
- 1/2 cup natural, unsweetened peanut butter
- 3 1/2 cups warm water
- 1 tsp Chipotle powder
- 1 tsp salt
- 1 tsp pepper
- 2 bay leaves
Instructions
If using an Instant Pot:
- Set Instant Pot to saute and add oil.
- While oil warms up, in a large bowl, combine peanut butter, tomato paste, and warm water. Stir well to combine.
- Once oil is up to temp, add diced onion and cook until it begins to turn translucent.
- Add beef to the pot and stir occasionally, until beef is browned on all sides.
- Add liquid from bowl and remaining ingredients. Stir to combine.
- Cook at pressure for 20 minutes. Let pressure naturally release.
- Once pressure is released, remove lid set Instant Pot to slow cooker mode for 2 hours or until desired thickness. Beef should be very tender.
If using an Slow Cooker:
- Set a large skillet over medium heat and add oil.
- While oil warms up, in a slow cooker, combine peanut butter, tomato paste, and warm water. Stir well to combine.
- Once oil is up to temp, add diced onion and cook until it begins to turn translucent.
- Add beef to the skillet and stir occasionally, until beef is browned on all sides.
- Add contents of skillet and remaining ingredients to slow cooker. Stir to combine.
- Cook at slow cooker to high and cooker for 1 hour.
- After 1 hour, set slow cooker to low and cook an additional 3 hours or until desired thickness. Beef should be very tender.
