Beef Peanut Butter Stew

If using an Instant Pot:

  1. Set Instant Pot to saute and add oil.
  2. While oil warms up, in a large bowl, combine peanut butter, tomato paste, and warm water. Stir well to combine.
  3. Once oil is up to temp, add diced onion and cook until it begins to turn translucent.
  4. Add beef to the pot and stir occasionally, until beef is browned on all sides.
  5. Add liquid from bowl and remaining ingredients. Stir to combine.
  6. Cook at pressure for 20 minutes. Let pressure naturally release.
  7. Once pressure is released, remove lid set Instant Pot to slow cooker mode for 2 hours or until desired thickness. Beef should be very tender.

If using an Slow Cooker:

  1. Set a large skillet over medium heat and add oil.
  2. While oil warms up, in a slow cooker, combine peanut butter, tomato paste, and warm water. Stir well to combine.
  3. Once oil is up to temp, add diced onion and cook until it begins to turn translucent.
  4. Add beef to the skillet and stir occasionally, until beef is browned on all sides.
  5. Add contents of skillet and remaining ingredients to slow cooker. Stir to combine.
  6. Cook at slow cooker to high and cooker for 1 hour.
  7. After 1 hour, set slow cooker to low and cook an additional 3 hours or until desired thickness. Beef should be very tender.
