Simple Freeze-Ahead Pesto
- 2 Cups washed and dried basil leaves (packed down)
- 3 tsp minced garlic
- 1/4 Cup pine nuts
- 1/2 fresh Parmesan or similar cheese
- 3/4 cup olive oil
- Add all ingrediants except for the oil to a food processor
- Pulse food processor until well mixed together and minced.
- With food processor blending, slowly pour oil in until desied consistency
- Add pesto to ice cube trays and freeze.
One cube of pesto is generally good for two servings of pasta.
